I clicked on Configure Fields -> Where Is My Field -> and typed in "Status".
That's when it gives me this:

It says that the "Status" field, which is built-in to Jira by default, is "Automatic".
"The value of this field is set automatically. It is never present on any editable form."
What does this mean exactly?
The status is set "automatically"?
Don't we need to be able to "edit the status" as we see fit?
I have created my own "custom value" for the "Status" attribute which is "Just Created (Static)".
But I cannot find a place to "edit" the "Status" attribute when I want to, for a particular issue.
All I see are these 3 built-in values of the "Status" attribute(To Do, In Progress, Done) which are at the top of the "individual issue" page here:

The easiest way to think of this is that "Status is not a field, so you can't edit it"
Status is an indicator of where an issue is in the process. It's showing you an underlying property of and issue as it relates to the process (workflow) it is going through.
To "edit" a status, you move it through the workflow using transitions. These are done differently depending on the issue view in use. For some views of Jira you have transitions shown as a menu-like thing to click on. For others, you have a drop-down with a target status, and selecting a new one triggers the transition. On boards, you drag them across columns.
