How can i determine who changed a field configuration w/o approval?

I am the project Admin, with 5 others who have admin privilege.

@Steve Hooczko have you checked the audit log on your instance? Depending on how you have it setup you should be able to see who changed the field configuration and when: https://support.atlassian.com/jira-cloud-administration/docs/audit-activities-in-jira-applications/.

Note: This is at the Jira Admin level, not project, so you may need to ask your admins if you don't have the necessary access.
