I created a "Software Project" about 3 weeks ago. Unrelated, but worth mentioning, the UI looks very different and there are many less options in "project settings." I need to create new fields within a Story ticket- which i know how to do. but i also need to make them required. We are having issues with quality of ticket content. Can someone help me in step by step directions on how to do this?
Also, i want to show tickets from other projects on this board and no matter what I do I cannot find the option to add a label to the board querry.
Did i totally botch this and create a board that is too simple?? will i have to start all over? the team has already onboarded to this board.

It sounds like you are using a Team-managed software project, and the functionality to add required fields is not there yet for those types of projects. You can vote for and follow that feature request here:

Are you working with a Team Managed project or a Company Managed project? It will say which it is at the bottom of the navigation pane on the left.
It sounds to me like you might be using a Team Managed project. If you are, those are intended to be "stand-alone" projects. You can't modify the board filter for such projects. For such projects the board shows all the issues from just that one project.
This could also account for why you are seeing fewer options under Project Settings.

If you have erroneously created a Team Managed project when you want the Company Managed project functionality you are familiar with, you will have to start over with creating a new project. You can move issues from one project to the other, but there are caveats and limitations as described here:

I could not understand first part of question.
Regarding showing tickets from other projects on your board, you will need to change the filter in board configuration. But if you need to show those tickets temporarily then I suggest not to show in board. Reason being, the reports gets affected based on the board. Rather create a dashboard to get stories of both the projects.
