How to change default system workflow scheme to a new workflow scheme

We have created a Greenhopper Simplified workflow to all our project but I could not find a way to set the new workflow as the default workflow scheme.

You can't unfortunately. There's a ticket opened for that request for quite a long time now: https://jira.atlassian.com/browse/JRA-9363
