How to disassociate a project from a workflow scheme?

My question is: how do we disassociate a project from the workflow scheme without having to create a brand new scheme?

You'll need to associate a different workflow to the project after you disassociate the current one because a Jira project must always be associated with a workflow scheme, since all issues must move through a workflow. To disassociate a custom workflow scheme from a project, you can associate that project to the default workflow scheme instead.
