Hi, I'm going to invite some people to follow progress on some projects, however, by releasing access on that project, this person can see others that are public.
How to limit access to these other projects so that only those inside can see them?

Actually, there is a little bit confusion in your question; why they don't see if the projects are "public"?
In addition to that, you can limit the projects' views from "Browse Issues" permission on each project's "Permission Scheme".
Probably, the projects' schemes contains "Application access", thus, if a user logins to the Jira, he/she can see these projects, cause he/she has access to the Jira.
You may want to change it to "Users" or some other role/group.
