You can have a different View Screen to Create/Edit using Screen Schemes - this works in Cloud.
This doesn't stop a user editing the field, but it makes it much more difficult, as the user would need to workaround the field being uneditable on the Screen.

OOTB you cannot achieve this. You can look at various marketplace apps. I do know that scriptrunner is one such app that allows you to use behaviors to achieve this but there are others as well.

What information is displayed on the custom field? Is the value provided on the Create issue screen?

If you are using the scriptrunner plugin, you can do this with behavior or you can use another third-party plugin. But if this plugin is not available, this automation rule can be tried before the paid solutions.
Trigger: You can monitor for change to the field sprint
Condition: If specific status
Then you can use compare field condition
Then use the action to edit the trigger issue

Basically Jira has 3 Issues operations 1. Create 2. Edit and View. You can use the 2 different Screen 1. One for Create and View and 2. For Edit.

Hi @Mayur Jadhav thanks for response. That is for server version but I am using Cloud. For cloud it has to be on both Edit & View screens in order to be visible.

@Mayur Jadhav In the above documentation it says to disable the Edit issue permission to those users which will result in disabling the edit action for other fields as well. But I want to restrict only one field and it's fine even if no body is able to edit it. And the document asks to create more transition screens, like one for every status. Correct me if I am wrong.

You can have self transition in to the workflow and add transition screen to the self transition and add relevant fields that you want to edit and apply condition ( only Admin or Group can edit).
