There are three options to capture changes to the estimate field.
1. History tab in the Activity section under single issue.
2. Sprint burndown chart or Sprint report. Choose time estimation.
3. Estimate addition/changes for the list of issues in a single report with Issue History for Jira app. Here you can filter issues by project, assignees, sprints, dates, etc.

Please provide more information about your scenario. What changes are being made to what fields? How do you want to capture this information? What do you want to do with the information.
Changes made to field values in issues is already recorded in the change history for the issue.

So My requirement is to capture the time and date of the event/activity when anyone adds an estimate to the original estimate field.
