then I get all issues with its related epics (status selected and status shown)
but the required status is not shown

Thank you for reaching out to Atlassian Community and for bringing up this issue to our attention.
Testing on my local site, I was able to replicate the same issue. The Epic link status always shows as To Do, even if the Epics are Closed or In progress in Jira.
Based on that, I created a bug ticket for our dev team to check:

I am not only worried about the field Epic Link.Status but field Epic Status as well, in which I expected to retrieve what I highlighted with red in my first image with text = En Aprobación del Cierre del Cambio which is our workflow current status. Is there any way to get that status as well as the other one you mentioned?

I checked with the team responsible for the add-on and the Epic Link.Status is related to the status that is changed directly in the backlog and not exactly the field Status in the ticket.
Changing the status there, it will reflect on Google Sheets.
Related to the other fields, I believe that it's currently not supported.
