It looks like there is a Versions and Epic pane on Backlog that allows you to quickly filter by those dimension, but nothing for label? Is there a way to customize this?

The short answer is no. Labels are not recommended because its freeform and can cause lots of confusion. You may end up with the lots of similar labels meaning the same thing.
For example:
sys, system, Systems, systems, SYSTEMS....
However, if you want to quick filter base on a particular attribute, you may want to look into quick filters for boards,

Thanks for the reply, but we end up creating epics that never end so that you can actually group things together and I don't think that is better. Labels are used a lot in github issues and add a lot of value in my opinion.

You welcome. Epics is design as a larger story which should be done at some point, otherwise, there will be a huge list. Each grouping is meant to be used in a certain way just like version. Eventually, at some point a version will be release and can be close out. Otherwise, the same thing happens here where you have a long list of versions.
Since labels are useful to you, then the method you can use is quick filter. Where you create a filter for each label of importance to you.

This has been an ongoing request since 2006 or so... I've seen a feature request with literally THOUSANDS of people voting for it..
But Atlassian still ignores it.
It would be very meaningful to have a filter pane with Labels / Tags just like Epics.
I still dont understand why Atlassian wont make it... only bad excuses.
