I use Jira also in advance before the project starts. Now - if the start gets delayed by whatever reason - how can I quickly move all epics and related tasks, subtasks relatively by a give time, lets say 14 days?

There is no native function in Jira Standard to change the start dates (and I assume you would also want the end dates changed) for multiple issues with a single button push.
You could create Automation Rules that would do that for your. You could either use manually triggered rules or a Scheduled rule. With the Scheduled rule it wouldn't matter what the schedule was. After saving the Scheduled rule you could use the Run Rule button to run it once, immediately, and then disable it.
If you try the Automation Rule approach I would advise you to test it out first in a test project with a small set of issues, replicating your actual project hierarchy. If you use it in your actual project and it doesn't work correctly you could end up with a mess of issues needing to be corrected manually.

Wow, didn't think this is so difficult to achieve, as it is probably happening every day? You mentioned Jira "Standard" - is this different in other releases? Would be pretty "Atlassian Style" 😎 ...

I'm not aware of that function being available in Jira Premium or Enterprise either.
However in Premium and Enterprise you have access to Advanced Roadmaps which has an auto-scheduling feature. I have not worked with that much so I don't know if it could be used to automatically change the dates if you had all the issues chained together as dependencies.
