To track the resources work, I was asked to create a Jira dashboard.
This Jira dashboard has 5 projects, when I created a Two Dimensional chart there were multiple 'In Progress' columns and the same for other statuses.
What I can understand is that each project has some tickets in In Progress and is displayed in different columns in the table per their project.
Is there a way to show the total number of tickets in one column for all the projects.

I know this is not intuitive, but it tells us that you have multiple status of "in progress". You can not do that for company-managed projects (their status can be shared, but has to have a unique name), but you have team-managed projects who have created workflows that have all have "in progress" as a status.
This is one of the reasons team-managed projects are not ready for larger organisations - they can contain many status with the same name. You need to exclude TMPs from this report, or migrate them over to CMPs so you have some more control. Despite having the same display name, your multiple to-do, in-progress, and other status columns are different objects.

I have seen that if I create a filter on 'StatusCategory' instead of Status then this issue gets resolved but this field is not available in dashboard gadgets/ Two dimensional filters.

Are any or all of these projects that you added to the gadget team-managed projects? That would explain why you see duplicate statuses, since team-managed projects are like an isolated island (for now) and statuses are unique for that project and the gadget is using the internal Id to get statuses and this Id is different for each project.
