Hello!
I created an automation rule to create tasks for testing after a story is created. I know this will apply to all newly created stories, but is there a way to apply to this to all stories previously created?

Yes, copy the automation rule that you have created and edit it.
Change the trigger to "Scheduled" and paste the JQL query that contains all the issues you'd like to create tasks to.
then publish the rule and you'll see "Run rule" on top of your screen to run it immediately.
