I am trying to add existing story's to new epic as an issue, under my existing project board. Unfortunately unlike the video tutorial on youtube I cannot see the "choose and existing issue" search bar. I cannot see it either in the epic as a standalone page or from within the aside window on the roadmap after selecting add child issue.
Am I missing an enabled feature?

Welcome to the community.
Are you working with a Team Managed project or a Company Managed project? It will say at the bottom of the navigation pane on the left. The video you referenced is specifically for Team Managed (previously known as Next Gen) projects. That feature does not appear to be available in Company Managed projects.
In a Company Managed project you can add an issue to an epic by going directly to the issue and adding the Issue Key for the Epic to the issue's Epic Link field.

Hi, @Matt Hollick are you using Jira Cloud? Else I just checked mine and "choose an existing issue" is visible.
Alternatively, you can create the issue (Story/Task) and then edit the issue, click on the ellipses (Action) and click on change parent then you can add the already created Epic.
Go to your Roadmap, it should be visible there.
