How can I capture the 'In progress' date for each epic, based on the oldest 'In progress' date among all its child issues, considering that the epics are already in the 'Done' state?

For such an aim, you can try Time in Status for Jira (Cloud), which tracks time in status data and generate 7 types of reports based on this data.

Do you mean that currently your epics are automatically moving to "in progress" when the first child issue move to "in progress"?
First of all, Jira save all this changes in the database by design. You should be able to find that change manually by looking into the history or activities tab of your Epic and get that date.
If it is transition automatically let's say by Automation, then Automation will have it in the log when looking for the epic key.
If you want to search for it for all epics, I would consider API because JQL might be limited.
Another good app to help is TIS (Time in Status) https://marketplace.atlassian.com/apps/1211756/time-in-status?tab=overview&hosting=cloud
It provides the date and counts of issue transitions.
