We are close to make the buy from Jira+Confluence+Zephir but my boss want a Project backup (by the way) to reduce the risk to lose the project in the process.
you can use project configurator to backup that project or you can keep a full back up of the site.
and also if you want to use that for your sandbox cloud you can enable it from you site setting it will use exactly all the projects you have in your prod env

Unless you are using a sperate Jira/Confluence Cloud site for your evaluation, you shouldn't have a problem when going through the purchase process and losing data. The only time you should have an issue is moving from Cloud to Server. Is this the case?
You can take a backup of your whole Jira and Confluence setup and restore it to a new instance or your original instance. During the restoration process, you will be given an option to import selected projects or all of the data from the backup.
Zephyr or Apps in general could be a problem as Apps sometimes store data in different places (Within Jira and/or the vendors own database). You need to investigate each App's backup process and test the backup restoration process on a sperate Jira Cloud instance to make sure the App works correctly and can be backed-up
