How can I find out what were the default global permissions when we first set up JIRA?

This question is in reference to Atlassian Documentation: Managing global permissions

My company allowed many people to adjust permissions or some people made changes without approval.  I am trying to get this under control.  To do that, I'm curious if there is anywhere I can look to see what the original default settings were for various areas.  The two that I am most concerned with at the moment are global permissions and the default permission scheme.

Please take a look at the attachments. Those are the default settings for Software/Service Desk instance.
