We had and employee leave the company and I need to be added to the list of administrators for any boards previously administered by him. How do I get that list so I can ask the other board administrators (or our Jira administrator) to add me as an administrator for those boards?
If you mean the administrator role, you can ask a system administrator to go to Administration > User Management, search for the user, then under 'Actions', select 'View Project roles' and look for all the projects in which the user was an Administrator, unless access is done via AD and he has already been deactivated.
Can also be done via a database query of the user in the Administrators project role.

You can get the list of boards which is administered by a particular user from Database easily by running the following query,
select * from AO_60DB71_RAPIDVIEW where OWNER_USER_NAME='example@user.com';

If you are an admin you can go view a list of all boards and see the owner. In cloud you can click on magnifying glass then at the bottom click on “boards”.
