I have taken over a project board that was created by a previous employee and I am the project lead within the project settings. I have administrator access yet I am unable to modify the Kanban board by removing/ renaming columns.
Do you have admin access to Jira or are you an admin for the board?
If you are not an admin for the board you won't be able to adjust the columns (even if you are a Jira admin). If you click on the ellipses mentioned above by @celsocos you should be able to go into the board settings to see who the admins are, and, assuming that there is another admin other than the previous employee, you can ask them to add you as an admin. I suggest that you also check the filter for the board to see who owns it and ask for edit access there as well.
If the previous employee is the only person with admin access to the board and edit access to the filter you can ask your Jira Site Admin to log in as that employee to change to permissions/ownership of the board and filter, but at that point I've found it easier to just recreate both the board and filter with me as the owner/admin,

ok thanks, I am the board admin but I think I will just recreate a new board as I don't have the icons to add/remove columns and it just seems the easiest and quickest way to move forward

In each column you have a "..." icon you can use to remove or rename the whole column. On the far right you have a "plus" icon you use to add a new column. So please mouse over those small icons to control the columns the way you like.
