The information on a linked issue shown on the issue screen is limited to the issue key, subject, priority (icon), assignee and state.
I'm used to be able to display all kind of additional information, from both the built-in and custom fields, for example, version of the linked issue.
What is the way to surface an additional information on a linked issue in Jira?

Hi, @Inna S. Indeed, there's currently no way to do this with Jira "out-of-the-box," and as @Rahul_RVS and @Hannes Obweger - JXL for Jira suggest by sharing info. about their apps., there are a number of Atlassian Marketplace apps that may meet your needs — including theirs.
If I may, I would suggest you conduct your own Atlassian Marketplace search using the criteria that matters to you.
For example, you are one Jira Cloud and you are looking for a way to view detailed information of your own choosing for linked issues. That search might look like this:
https://marketplace.atlassian.com/addons/app/jira/top-selling?hosting=cloud&moreFilters=cloudFortified&query=flexible%20view
Note that I used Jira, Cloud, Cloud Fortified (i.e., meets Atlassian security standards), and "flexible view." I tried with and without "linked issues" but adding it showed a bunch of apps that don't really do what state above.
Now you can craft your own search for the right (for you) app.

I have a lot of security related concerns with regards to the marketplace apps, so was hoping to do without. But I guess, this is what we have.

I do not believe that is possible with out-of-the-box Jira Cloud.
There are several open suggestions to enable configuration of those fields, such as this one: https://jira.atlassian.com/browse/JRACLOUD-36490

You could use our add-on Jira Fields & Reports Extensions to display fields of related issues such as linked issues.
Additionally, Field and Reports Extensions provides a custom search and report panel. It is also free!

Unfortunately, our policy-in-the-making is to only use Marketplace apps that are cloud fortified and this application is not.
But it looks promising and I'll keep an eye on it should the status change.

As I still have an access to our old app, I thought I would share the view I am looking for.
You see, this is the individual issue 'card'.
It has a tab called Dependencies.
That has two tabs: predecessors and successors.
Where all the related items are displayed. And any user can choose
a) what fields of the related items should be presented,
b) in what order
c) in what sort order
d) how they should be filtered
So far I see nothing that would be remotely similar to this functionality in Jira or in any of the marketplace apps.

If you are fine with a mktplace app, you can have a look at our add-on to get this data.
and generate insights such as:
- View the full Jira Issue Type hierarchy of Linked issues,
Portfolio/Advanced Roadmaps, Epics, and Subtasks up to 10 levels.
- % complete based on time spent and story points at each hierarchy level
- Sum up Time Spent, Org Estimate, Time Rmng, custom number
fields
The app allows you to add your custom fields on the report screen.

In this specific question I mean the information present on the issue screen, where there is a line for every linked issue.
In our old system this was super easy and flexible, so I thought I might be missing some configuration, but apparently I'm not.

just to add to Bill's answer: If you're open to solutions from the Atlassian Marketplace, you may want to explore some of the hierarchy-focused apps in the Marketplace.
E.g, my team is working on JXL for Jira, a full-fledged spreadsheet/table view for your issues that allows viewing and inline-editing all your issue fields (including all custom fields). JXL can also show your issues in their hierarchy - either based on the built-in parent/child relationships, or based on issue links, or any combination of these. As you can freely configure the data to be shown in the table, this should nicely solve your use case:
