You can do this with one click using the Better Excel Exporter app.
It has a default (but customizable!) export template project-export.xlsx which produces a spreadsheet like this:

I am not sure this is possible out of the box with excel. You could however use the Rest API function to fetch all projects and save this into a file which you can then further process into an Excel file.

The result returned will be In JSON and you can process this further.

You can't really download a list of projects out of the box. You might be able to do it with an API call. What I usually do is Copy on my monitor and then paste the list into Excel and then do some clean up.
