Of course I am aware that there is the system of "estimated time" and "remaining time" fields, to follow the progress of a task, but it is not enough for me today.
To be more specific, I would like to track my employees daily assignments to estimate tasks duration and refine these estimates over time.
For example, I wish I could say that this week, Billie will work Monday and Tuesday on the "TASK-1", and Flynn will work Wednesday on that same task. And the next week Billie will work every day on "TASK-2".
Is there a way to do this with the different types of projects or settings in Jira?

Out of the box there is no planning possibility on Jira other than planning items in a specific sprint. You could also have a custom setup and use a date field to plan when something can be started with. But that's obviously not what you are looking for.
In the past I have used the Tempo Planner app. By drag and drop you can plan items on a specific day for an individual or team. This gives you a capacity view. There are several other apps offering similar capabilities.
