On an Epic ticket, I will have several Child Issues (tasks) that are listed under the Child Issues section of the Epic ticket screen. There is an Order by menu where I can choose from four options to sort,
Can I add an option to this menu, day, Due date? If so, how do I do that?

No, it is not possible to customize the options for sorting child issues in an Epic at this time.
I've looked for a change requests in Atlassian's backlog for that, but so far have not found one.
I recommend that you contact Atlassian directly to ask if they already have that in their backlog as a change request.
I would really like to have the option to sort child issues by name. We will have dozens of child issues (a punch list of tasks) in a story, and manually reordering them isn't feasible. Did you find a feature request for this? (I couldn't)
