I am not sure if Jira is the best place to document this, as it is essentially meant to track work that needs to be done. I would personally rather document that in Confluence.
But apart from that, technically that is certainly possible. All you would need, is to create your own custom fields and add them to the screens of your issues.

Thanks for the prompt response @Walter Buggenhout but we wanted our issue tracker more like:
We list features with the source from where those requests are coming, prioritisation score and then we assign it to engineers through gitlab.
The basic goal is, in a nice dashboard roadmap(as shown in the above example):
- list the features in "epic, stories, tasks"
- prioritisation by "customer segmentation, industry, value/effort" and
-competition checklist if that feature is available to competitors or not.
- number of people voted for this feature.
- Engineers can pick the tasks where they are assigned.
I tried using custom field and I am able to get those details while creating issues but goal is to see them on the roadmap dashboard.
Not sure If JIRA is the right tool to achieve this.
