Somehow, the status all of my issues start in was updated to another status than "To Do" and JIRA will not allow me to transition it back:

Status Category is not the same thing as the Status. The Status Category has just three options - To Do, In Progress, or Done. All statuses must fall into one of these categories.
So the To Do status is not the same as the To Do status category. Although it probably has that category. The error message is saying you can't start in an In Progress status category. That's what Testing is in your example (In Progress category has the blue color to it).
You can try what Mirek suggests if it will let you change the category. Or maybe add a new column to the board (make it the first column) with a new status of a different name, and then switch them out later.

I would go ahead and submit a Support Ticket with Atlassian then. We can speculate a lot but it is probably better to get them involved now. Sorry I couldn't help more

Maybe you can temporary change the TESTING status to "to do" category and then try to switch it?
