I'm having an issue configuring a Kanban board for one of my projects. the closed column is causing the board to load slowly/freeze up. I'd like to remove that or remove how many issues are described, but I can't seem to find the ... (more) button that the documentation keeps referring to.
I'm an administrator both on the board and on the site in general, but I can't seem to find the button mentioned. Does anyone know what i'm doing wrong/know any better ways to help this board load better?

What type of project is this? Is it possible that this is a business project and that the board you were looking at is a default board that cannot be configured? If you share a complete screenshot it might give us a bit more information.
now with that said, you started off saying that this is an issue with performance. That the number of issues in the closed column was causing the board to load slowly or lock up. Why do you assume that this is the case? Can you give details about how many number of issues you have on your board and in the closed column?
it IS a business project, so i guess that solves that mystery. Sorry to be so dense :/ The reason i think that is because the current number of issues showing in the "closed" column is 162.
The "list" option also loads very slowly.

162 should not really cause a problem to be honest. I don’t use a whole lot of business projects and often for those I do I create a full featured kanban board so that I can configure it. But I am wondering exactly what the algorithm is for aging of done issues for a default business board. Might I ask what the oldest done issue is in your closed column. What is the oldest resolution date?

The oldest one appears to be from when we started using this board again at the end of July (we cleared all of the old data off the board).
As for how slow, it freezes enough that Chrome brings up a "Page Unresponsive" warning due to the page not being interactive. It does eventually load, but it takes about 20 seconds or so to fully load.
The list option just looks like a text only version of the board, i doesn't have the tickets located in different columns.

That is indeed slow. Is it slow on other browsers? I would definitely suggest opening a support ticket with Atlassian. They will be able to log into your instance and have a look.

Are you working with a Company Managed project or a Team Managed project?
For a Company Managed project, there is a ... button in the upper right corner of the board display, and from there you would select Settings.
For a Team Managed project you need to go to Project Settings > Board, and that will give you a screen for modifying the columns on your board.
From you answers to the other suggestions I'm guessing that you are working with a Team Managed project. For those you cannot modify the filter or subfilter used by the board, nor modify the "Hide completed issues" value.

It says at the bottom "You are in a company managed project" is that what you are talking about?

In the Kanban board settings, General area, scroll down to the bottom and there is a: Hide completed issues older than field. The values are: 1 week, 2 weeks, 4 weeks, Never mind, show all.
Sounds like you have the Never mind, show all selects.

I can't seem to find the Kanban board settings on my project. I know there is supposed to be like a ... menu somewhere i can select it, but i am either blind or looking in the wrong place :/

Ah, it could be you aren't the owner or don't have admin privs to edit it.
In upper right corner of the board, select the 3 dots and then Board Settings, Then the General area. If you don't have Board settings, then you will need to talk with the board admin.

No dice on that link, it just tells me that it's not available. Our jira instance URL is companyname.jira.com if that makes a difference.

I created a test project, and even with a brand new board, i still don't see the settings menu you referenced. It almost has to be a permissions issue like you said...

Hmm, I don't believe that would matter. Just a different place it lives. By chance, have you tried to logout and back on again. I've had weird things happen to me and that fixed it. I use Chrome 99% of the time.
Here is a screen shot of the Kanban board area from earlier, more real estate this time. It doesn't happen to be on the right side of screen and you need to scroll over by chance??

Ok i tried logging out and back in, i also tried a different browser, but I still get the same result. I've attached a copy of what i see in the same area you took your screenshot. I did not see it any further to the right near the top of the page either :(
