its possible to create/modify default Project types? ex: Project A with a structure like Epics, Tasks, Sub-Tasks and Project B with Epics, Storys and Tasks or do i have, after creating a new Project with a default Project type, to change the "schemes"
Its possible to create a "scheme" with a special configuration for Issue Types, Workflows and Field Configuration? and after creating a new Project -> selecting a "scheme" the basic Project will adopt my special configuration?

The templates are a reflection of default schemes - you can edit some of these, but I'd be cautious doing so as I've seen teams who do so and then can't revert it.
What you can do is during the "Create Project" process, check the box "Share settings with an existing project" - this will allow you to pick another project to copy the schemes from - including workflows, field configs, screens, etc.
That way you could create a project as a "template" for other projects, and then copy the configuration of it using that checkbox - or just copy another existing project!
