We have a number of JIRA projects, and I want to restrict access for some users to a single project.
I have searched the community but the answers are generally about assigning users to a Group. I know how to do this, and have set up a group, but don't seem to be able to set the group permissions
example
We have JIRA projects A, B and C
We have users 1, 2, 3
I want to restrict User 3 to Project C, but allow users 1 and 2 access to all projects

For your query, i suggest you to create a seperate permission scheme for each projects.
In Browser Project permission allow some project role like Users, Developers etc. Remove any logged in Users or Anyone of the web from Browse Projcect permission.
Once you set up permission scheme for all three projects, now go to People/ Users and Roles under Project Settings >>Add User 1 and 2 in all three project user role and Add User 3 in Project C only . In this way ,1 and 2 can access all projects but 3 can access only Project C.
You must be an JIRA Admin to create user group or create permission sheme for a project.

Hi Vikrat I tried your advice but am no closer to solving it
I created a permission scheme, but don't know how to make it project specific
One would think that it should be straight forward to create a project and allow only specific user access to it
or create a permission scheme that only allows access to a single project

I have added some screem image below....I set up BoomProject permission scheme which I assume applies to the project 'Boomi (Boom)'

Hi @Warde Wynter If Projects are using Default Permission Scheme,in those project Any Logged in User, can browse issue and create issue.
In Order to Restrict project A and B from ( user 3) , create a seperate permission scheme for A and B projects only and add Remove "Application access (Any logged in user)" from permission scheme. So that users ( 1 and 2) which are added to Project A and B project role can see both project A and B but hidden for User 3.
In Project C, keep default permission, so that any user 1,2,3,4...can access and create issue.
Kindly check permission for Project A and B,,, if Application access (Any logged in user) is added under Create Issue and Browse project, it means User 1,2,3 can project A and B.
If project is already having seperate permission schemes, then you only need to add user in project role.

Thanks @Warde Wynter For the screenshot, If this Permission scheme is mapped with Bhoomi project, then users which are added in Bhoomjiraproj group can only access this project. Other user can't see this project.
