Hi Guido,
You can try a JQL filter like this:
project = ABC and assignee changed to john.funk during (2022-01-01, 2022-06-30)
This would show everything on the ABC project that got assigned to me in the first 6 months of the year. You can adjust your values and needed. You might have to use the accountID instead of the username depending on how you are set up.

you can get this with JQL:
assignee changed to gbirkenfeld BEFORE startOfWeek(-2) AND assignee changed to gbirkenfeld AFTER startOfWeek(-1)
That will get every ticket that you were assigned to last week
You can change the before and after dates to set the time window you want.

OOTB there isn't a simple report that illustrates "number of issues assigned to user by time period. I would look to the marketplace for options. OOTB your best option would likely be to create a dashboard and leverage various gadgets that will illustrate issues being assigned to you.
