Currently we have an approval status baked into our workflow, and users are not able to work on tasks that have not been approved. I need issues created by various managers (1-2 people specifically) to be defaulted to this approved status to help streamline the process for them. Any insight?

if I undersootd you correctly you want that issues created by reporter A or B to go "directly" to a approved state.
I'm not remember anything that gives you that direct flow, but you can have something simillar with:

Setting a service to run a jelly script i na given period of time ( secounds) that would catch any issue in Open state createb by "managers" and automatly make the transition of the issues to the state you need.

JIRA Enhancer Plugin has Assign to a User in a Role and Assign to a user in a role, based on a field of issue post function workflow postfunctions.
You can check and watch screencast on site www.jiraenhancerplugin.comand documentation page.
However, at the moment it is not available for "on demand" instances.
