Is there any way to pull the release date from the fix version and show it within a ticket? I've attached some screenshots of where I'd like it placed. I'd really like it on 1 & 2, and a nice to have would be 3.

Hi Christina,
If you are using a Cloud instance you won't be able to achieve that, as it would require some kind of modification on JIRA that's not actually supported for Cloud.
The best you can do is to create a custom field of Release date and control what information this field gonna hold.
