Unable to move tickets between columns in Company based project

I created a new company-based project. I have 2 boards with separate tickets filtered with components. I see workflow is different when compared to team based. I moved tickets from team to company-based project. 

When i try moving tickets, it says "ask administrator to check workflow setting and transition conditions. I am not familiar with this. We removed transitions but doesn't seem to work as we are unsure how to edit workflow.

Is it possible to get rid of other status such as " On hold, assign to IT etc". I need To-do, In progress, Development, Testing, Prod, Done only but workflow shows much more. Could someone please provide direction? thank you

You can get rid of any statuses you wish, but you'll have to make changes like that to a copy of the existing workflow (an inactive copy), or create a brand new workflow - then you'll apply the new workflow to your project.  That process will update the existing tickets so they can use the new workflow.

There are several places you can get directions for that, but in a company managed project there are multiple steps and you'll need the appropriate permissions level to do it.
