While creating the project, I used a project's template from the "Share settings with an existing project" section. But now I don't want to use that project template. Can I do this without deleting the project?

Yes.
The project templates only matter at time of creation, they don't do anything else (that's the definition of a template - create something the same shape to begin with), so they're actually irrelevant here.
Schemes (the configuration settings for projects) are a global list, they're not locked to a project (although you'll see many are named after projects, they do not belong to them). The projects choose to use a scheme.
If you change a scheme, it affects all the projects currently using it.
But if you want to change the shape of a project that is using a scheme, you change the project to use another scheme.
You don't need to delete anything, just tell your project to use different schemes!

While on the project, go to Project Settings in the bottom left. You must be a Project Administrator to see the Project Settings link.
Then click the Summary on the top left. On the next screen you will see all of the schemes. Click on the scheme name to change it. On the following screen click Switch Scheme or the Actions button and then Switch Scheme.

Project settings allow you to select different schemes, but if you need new schemes, you will need to go to Admin -> Issues and work your way through creating new ones (I recommend copying and amending schemes, not starting from scratch!)
