"Won't Do" status remains after we decide to do the story later.

We are having an issue where stories we marked a couple years back as "won't do" still have the "won't do" label even when we move them back into the backlog or any phase of the active sprint cycle. Any ideas on what we can do to automatically have this status update (disappear) when we change our minds?

I think you mean the resolution - which is just off to the side of the status. You can only remove that during a workflow transition - so you'll want to use a post-function to clear the resolution when you're moving tickets to the backlog.
